Edam today

Dutch Edam is produced and ripened in the classic Dutch cheese making tradition, using milk from the famous piebald Frisian cows. It is ripened for four weeks to give it a delicate, mild taste with a delicious creamy texture.

Every day, Cooperative Friesland Foods, Holland's largest Edam producer made up of a cooperative of Dutch dairy farmers, receives fresh milk from farms in the north and east of the Netherlands. These are the areas in which the famous piebald Frisian cows graze whose milk constitutes the basis for Edam cheese.

A cheese for all the family, Edam is also available with a more mature flavour; left to ripen longer it acquires a more pronounced taste. In total there are three stages of maturity: mild, mature and extra mature.
