Edam cheese originated in Holland in the 14th century and now thousands of Edam balls are distributed around the world every day. Between the 14th century and 18th century Edam was the most popular cheese in the world. This was due to the fact that it matured easily and lasted for long periods of time, so was often included in the standard ship stores. In its early years, Edam (like all other cheeses), was a cottage made cheese. However towards the late 19th century a major shift towards industrialised production took place. This development perfected the cheese both in quality and in consistency and enabled production on a much larger scale. Edam is steeped in the tradition of Holland and as a result Dutch laws carefully stipulate how the rind, shape, consistency, fat percentage and colour should be so that Edam remains true to its origins. This naturally-ripened Edam Ball with its famous red coating is now exported to virtually every country in the world and is one of the most wide-spread Dutch food items in history. |
